Maple chai overnight oats with sticky oranges and toasted almonds

50g whole rolled oats (gluten-free if preferred)
100ml milk of choice (dairy, oat, soy, almond, cashew)
1 ½ tsp Chai powder mix containing: cinnamon, ginger, cardamom, black pepper, cloves
½ tsp vanilla paste
1 orange
2 tsp maple syrup
25g sliced almonds
½ tsp sesame seeds
  1. Methods

    Step 1

    In a small bowl, jar or cup mix the oats and Chai powder. Add the vanilla paste and stir well. Next pour over the milk, mix and  refrigerate for 8-10 hours or overnight.

    Step 2

    Peel and slice an orange (*a blood orange was used in this recipe) and place in a small saucepan with 1 tsp maple syrup.

    Step 3

    Cook on a low heat until the orange slices start to soften and the syrup is almost bubbling. Take off the heat and leave to cool. In a separate container to the oats, refrigerate for 8-10 hours or overnight.

    Step 4

    Add your almonds to a dry, flat pan on the hob and toast on a low heat for 4-5 minutes. Shuffle every 2 minutes or so to make sure all sides are even. Store somewhere cool and dry but out of the fridge, until ready for use.

    Step 5

    In the morning transfer your oats to a bowl if needed and loosen with a splash of milk if needed. Top with the sticky oranges and toasted almonds. Garnish with sesame seeds, ground cinnamon and a drizzle of honey or maple syrup. Enjoy!
